This programme is meant for chefs already within the culinary field who have experience but no formal qualification. With this program, you will be able to get a City & Guilds Level 2 diploma.
Please note that Pro Chef is NOT a teaching program but is an program of assessments enabling industry experienced chefs to appear for a series of assessments, pass these assessments and receive international diploma qualification to facilitate career growth and opportunities. A student not passing any of the assessments will not qualify until all assessments, both practical and online, have been cleared. Please note that re-doing any assessment results in additional costs so students should practice well before attending any of the assessments.
Below you will see the areas in which you would be practically assessed to qualify for the level 2 diploma. These assessments are practical tests which will be conducted at SCAFA and for which you must come prepared and practiced to pass the assessment:
Unit 105Â Prepare food for cold presentation
Unit 206 Healthier foods and special diets (preparation and written menu required)
Unit 207Â Prepare, cook and finish stocks, soups and sauces
Unit 208 Prepare, cook and finish fish and shellfish
Unit 209 Prepare, cook and finish meat (2 ways – wet/dry), poultry and offal
Unit 210 Prepare, cook and finish vegetables(2 types) , fruit and pulses
Unit 211Â Prepare, cook and finish rice, grain, farinaceous products and egg dishes
Unit 212 Prepare, cook and finish bakery products (cake, biscuit, bread, pastry)
Unit 213 Prepare, cook and finish hot and cold desserts and puddings
In addition to the Practical assessments there are 3 online assessments which are English language online objective test and take place after completion of the practical assessments. The areas you will be examined on are:
Unit 202 & 203Â Â Online theory assessment in food hygiene
Unit 219 & 221Â Â Online theory assessment in kitchen preparation
Hospitality Industry
The schedule of the Pro Chef is based on the candidate’s time and availability as well as the scheduling of the school. Generally assessments should be completed within 4 to 6 weeks.
