Level 2 Diploma in Food Preparation and Culinary Arts – Patisserie (Pro Weekend Pastry)

The Pro Weekend-Pastry program is the region’s premier curriculum designed for aspiring pastry enthusiasts seeking to achieve professional standards. This 24-weekend program includes four comprehensive teaching modules and a four-week assessment phase featuring both practical and online evaluations. The curriculum emphasizes core areas such as doughs and breads, tarts and chocolate, cakes, and desserts.

Our structured approach allows students to specialize in a specific area of interest or master the full spectrum of pastry skills, culminating in an international diploma. The program offers double-class, instructor-led sessions every Saturday, from 9:00 AM to 5:00 PM, providing a convenient schedule for working professionals, who would otherwise not be able to attend a full-time program.

We believe that students who join our program would be gaining one or all these 4 critical areas:
· Mastering Doughs and Batters
Develop foundational techniques for preparing various breads, batters, and pastries, ensuring consistent quality and texture.
· Crafting Desserts
Gain expertise in creating both classic and modern desserts, focusing on balance, flavor profiles, and presentation.
· Tarts, Biscuits, and Chocolate Work
Learn precision in crafting delicate tarts and biscuits, alongside essential skills in chocolate tempering and decorative techniques.
· Cake Making and Decorating
Build competence in baking and assembling cakes, along with advanced decorating skills to create visually stunning creations.
Students completing individual modules receive SCAFA Certification. Those who complete all four modules and the final assessments also earn SCAFA Certification.
