During the last 5 years Scafa team has developed the menu for over 30 concepts in the UAE, Kuwait, Kingdom of Saudi Arabia, Pakistan and Iran.
The menu development process is comprised of the following stages:
Client briefing of the concept, benchmarks and desired concept.
Second round of tastings. If necessary we might run a third round of tasting.
Second stage of menu development.
First round of tastings. Client provides feedback to be incorporated in the further development.
First stage of menu development including SOP, pictures and plating.
Menu development financial proposal.
Signage of NDA and menu development contract.
Ideation and preparation of menu options for the client.
Client selects items to be developed.
Staff selection and hiring.
Staff training and quality assurance.
Pre-opening support.
Opening support.
Finalization of the menu development document which includes.
a. Standard operational procedure (recipes and sub recipes).
b. Photographs for each critical step for all SOP.
c. Ingredients list with cost, yield and wastage.
d. Menu costing.
e. Suppliers list.
f. Kitchen equipment recommendation and advice on equipment, equipment suppliers and kitchen design.
g. Kitchen checklists and ordering lists.
h. Job descriptions.
