Course Description

The Pro Chef Program is ideal for experienced culinary professionals looking to move into supervisory roles through the pursuit of accredited culinary certification/diploma from City and Guilds London.

Pro Chef Program
This program is meant for chefs already within the culinary field who have experience but no formal qualification. With this program, you will be able to achieve a City & Guilds Level 2 certification.
Please see the areas in which you would be assessed in the Level 2 program (practical assessments):
Unit 105 Prepare food for cold presentation
Unit 206 Healthier foods and special diets (preparation and written menu required) –
Write a 3-course menu and prepare one of the items from the menu – the menu should be typed on Word format
Unit 207 Prepare, cook and finish stocks, soups and sauces
Unit 208 Prepare, cook and finish fish and shellfish
Unit 209 Prepare, cook and finish meat (2 ways – wet/dry), poultry and offal
Unit 210 Prepare, cook and finish vegetables(2 types), fruit and pulses
Unit 211 Prepare, cook and finish rice, grain, farinaceous product and egg dish
Unit 212 Prepare, cook and finish bakery products (cake, biscuit, bread, pastry)
Unit 213 Prepare, cook and finish hot and cold desserts and puddings
Followed by 2 online assessments:
Unit 202 & 203 Online theory assessment in food hygiene
Unit 219 & 221 Online theory assessment in kitchen preparation


Students who successfully complete the Professional Kitchen program will be awarded certification duly attested by the Government of Dubai’s Knowledge & Human Development Authority (KHDA) as well as a City & Guilds 8065-02 Level 2 Diploma in Food Preparation and Cooking (Culinary Arts) – IVQ

The schedule of the Pro Chef is based on the candidate’s time and availability as well as the scheduling of the school.
